"Im not sure if your allergies extend to varnish, but varnish also makes a good wood end grain sealer. ie, if you cut the formica shelf, you can dress the cut edges with varnish.

ok...no epoxy then.....

Home Depot sells these formica covered pieces of wood intended to be cupboard shelving.....the formica is on both top and bottom....the shelves vary in width...I'm guessing...
