My primary question hopefully for someone who has done this is can I simply remove the current NMEA 0183 connection from the chart plotter, run it...

Been there done that. I have up until recently had my autopilot and other devices such as radar that needed GPS position, speed, etc data all working together with a multiplexer connected to they...
