Anything using gas for shielding is going to be a PITA when used in an open area subject to draughts. It takes a lot more breeze to upset self shielded wires and a lot more again to effect stick...

I'd have to respectfully disagree with a couple of things there. If you TIG or MIG weld stainless steel with full penetration, you do need to purge the underside of the weld, however stick electrode...
