Ok, you have a fair bit of redundancy. Provided the cables are individually large enough to carry the load, you only need one cable going to the starter. Same for going to the switch. In theory,...

Think you could sketch a quick wiring diagram for how everything is connected? Including how each battery is connected to the switch?
