As I recall it's the gimbal lock. The crossbar lifts to unlock and open the oven door and this button disconnects the gimbal allowing the unit to heel with the boat.

I think you are on the right track. We don't sail too much between about now and March so I run some antifreeze through the engine. For the reasons mentioned I leave our water tanks alone...

Our 36 is a later model but I suspect the keel bolts, washers, ect. are the same.
The keel bolts are all the same size...

I installed one of these on a past boat where the in hull transducer failed. The short story is that it worked seamlessly and I wouldn’t hesitate doing it again.
