If your going with a Vee then I would work at getting long waterline and higher prismatic in the ends to minimise pitching and keep your shallow rudders biting.
Maybe consider horizontal foils on...

Are you sure they are joined at leech ? If mast rotation changes shape then they are going to be different lengths at leech ?
