The drawings show a centerboard, do you have one? Board down for upwind, board up for downwind.
That boat should do 10+ knots easily. Maybe lots faster!:thumb:

Put the sails in sausage bags and leave them on deck. You can drop one sail and put it in the bag and then just pull out the other out of the other bag. Sausage bags are as long as the intended sail...
