It sounds like you have lots of boating experience which is comforting.
I've been sailing for various chunks of my life, most recently (2013-16) in the round-the-world Blue Planet Odyssey organized by Jimmy Cornell. Adventure of a life time!
After several years tending to land-based responsibilities, the sea beckons as I am next week having surveyed a 2002 Beneteau 361 prior to purchase. The vessel looks great for coastal cruiser. Based on the survey, I plan to sail to Atlantic City mid-April.
Route options are as you've stated and open for discussion. I've done the C&D Canal a few times. My only negative memory of the Delaware Bay is the commercial traffic. While lengthier, the trip down the Chesapeake and up the coast has more attraction.
