Just about every island has its own cellular providers, so it is unlikely that you will have constant connectivity enroute with your iPhone. I don't know if the Navionics uses downloaded maps and the internal GPS or if it needs a permanent connection to work.
GPS is a satellite-based system, unlike cellular and Wi-Fi; so you won't have any issues.
