Because of the season I will recommend a very old
family recipe you'll want to make again.
Stuffed Pumpkin
Ingredients:
1 small pumpkin
2# ground veal, pork & beef (or venison)
1 chopped onion
4 potatoes (cooked & mashed w/ butter,
salt & pepper)
1/4cup dry sherry
1 tsp poultry seasoning
1/2 tsp allspice
dash cinnamon
salt & pepper
Carefully remove top of pumpkin so it can be replaced. Thoroughly clean inside and rub w/ salt & pepper.
Brown meat, onions and spices. Remove excess
oil, and add sherry.
Place meat in bottom of pumpkin, and cover w/ potatoes. Replace top of pumpkin, and place pumpkin in baking pan w/ 1/2"
water.
Bake @ 350* for approx 75 minutes. Serve contents w/ some of the pumpkin.
