Two week journey

I'll be sailing / motoring from Annapolis to Charleston.
2 or 3 aboard.
Does anyone have general advice on provisioning for a 14 day trip?

Take a few extra crew and draw straws to eat each other along the way. Just make sure you rig the straws.

I kid.

Will you be sailing down the ICW? If so you can just provision along the way.

My advice is to keep it simple -- hot cereals/oatmeal for mornings with lots of coffee/tea that can be kept hot through the evening watches; sandwiches that include lettuce/tomato/peppers for lunch; lots of snacks in between (GORP, Cuties, apples, cheese/crackers/salami, etc); and pre-made or easy made casseroles/one pot meals for the evenings. Sriracha sauce is also your friend...

Hard to say, without knowing your boat -- freezer? fridge(s)? storage? -- and your tastes.

When we start a trip like that, and we stock for about 15 evening meals with main courses based on frozen meats/poultry/shrimp/etc. and about 6 pre-cooked dinners... plus another 3 meals designed around canned stuff (e.g., tuna casserole and so forth). Plus odds and ends for breakfasts and lunches. But then we have boatloads of storage available, two fridges, and a decent freezer. And it's just the two of us aboard.

Much to be resupplied whenever we feel like it. (Not all that difficult.)

Ideally augmented by meals at whatever good restaurants we decide to try when we use marinas instead of anchoring (can't hardly move anywhere without something decent being available).

The crew of the Essex used this method after their ship sank.

They sailed three whaleboats (each about 28' long) close to 4,000 miles to get back to the mainland.

Three sailors though decided to stay at one of the islands they stopped at along the way rather than staying on the boats

Are you taking the ICW the whole way? Assuming so if it's going to take 14 days. Anchoring out every night or staying in marinas? There is so much available on the ICW you probably won't need more that 3-4 days provisions before you'll easily be able to go shopping again.

I did that same trip in reverse about ten years ago, you're going to have a blast.

Unless you're going to be on the hook the whole time or going outside, I wouldn't worry too much about groceries. There are a great many marinas along the route that offer "courtesy cars" to run out the local grocery stores. Take enough for a couple three days, you're going to want to get off the boat and stretch your legs anyway.
