Two cookers
Does anyone have two gas cookers on their boat? We are a family of 5 and one cooker is too small ( especially for a good roast dinner )
I'm not sure about simply buying one big cooker, as often this will be too big for quick jobs.

I frequently cater for 4-6 from my two burner + hotplate with oven cooker. It just takes a bit of ingenuity and planning.
I have done an Indian curry, consisting of 1 meat dish, 1 veg dish, rice, onion bhajis, poppodums, pickles and chutneys for 9 before - that was hard going but possible!

Two cookers
We use a three burner that often acts like a two; we have an oven that works okay (if I mention the brand it will bring out the collective groans) for the Tropics where we are now, and...we use a pressure cooker (I'm kind of embarrassed to say we have two, small and large) that has allowed us to do meals for 2 to 8 with relative ease. And it helps save propane and keep the galley from being too uncomfortable.
Is that what you mean by "cookers"?

I've cooked a roast dinner for 14 people with 2 burners and an oven. We currently have 3 burners, oven and grill. I find this perfectly adequate for catering for up to 10 people. If you are having trouble cooking for 5, I'd be re-evaluating you cooking methods, not your facilities (no offense intended).

Good point. We have adapted our repertoire to boat cooking, for sure. Sometimes by using other cruisers recipes and methods and often by trial and error. Some things are just too "fiddly" (as Ann Vanderhoof writes) for boats.

One thing that makes a big difference for us is having steamers that you can put on top of other pans, so you can steam your vegetables on top of a pan that is cooking pasta or rice or potatoes, or whatever... you can even steam vegetables on top of a slow-cooking / simmering pot of sauce or stew or soup or whatever, it just takes a bit longer than if it were over boiling water.
Another suggestion, instead of getting a 2nd cooker, how about a stern-rail mounted barbecue: This gives you options for cooking barbecue style food but can also provide you with that extra heating option when you find you are struggling to fit everything you want on your galley stove. And it doesn't have to be used purely for barbecue style cooking - A barbecue can also be used as a hot plate if required, or for roasting.

How about a Cobb, I love mine and use it to cook everything from bread and pizza to roasts and curries.

I love looking in a wok and you only need one burner.
You can fry, boil, bake or braise. Just use more ingredients for more people.

If we need extra cooking power we fire up the BBQ. Actually, it's the other way around, the BBQ is our go to.
We use a Dickinson SeaBQue. These are EXCELLENT units. Very hot, even in windy conditions.
Another option is you might be able to run a small microwave off your inverter. I know we can.
