You are kidding if you think that the winged keep has anything to do with how fast you heel over, that is more to do with the amount of weight in the keel and the hull form. Generally the wing places more weight down low, similar to a bulb, and designers feel that they can reduce the actual weight in the keel since it is placed lower, it should balance out.

But more to the point, don't imagine that a full keel is stiffer. In general full keel boats don't have the form stability as some other kinds of boats and many of them tend to be tender.

We have been thankful multiple times for having a gimbled stove/oven on our sailboat. We do cook underway and when a big wake or wave hits the boat sideways the pots would go flying without it!
