Tinned Butter

I seem to remember reading a thread on here about tinning butter for longer term storage but can't find the damn thing. Has anyone got any recipes, ideas etc? The stuff is very hard/impossible to find in NZ.

I’ve started using a French Butter Bell Crock to keep unrefrigerated butter at home.
The butter is protected by an airtight seal of water at the base of the crock. As you can see in the diagram, the butter goes in top half ,and sits in the bottom half that contains 1/3 cup of water. Will keep un-refrigerated butter fresh up to several weeks.

A general guide line for shelf life of butter, in a refrigerator is:
- 8 weeks for an un-opened pack of unsalted butter
- 12 weeks for un-opened salted butter
- 3 weeks for opened butter
- 6 months for frozen butter

- 3 years minimum (to nearly indefinite) for un-refrigerated, un-opened canned butter (“Red Feather” from Ballantyne Foods Pty Ltd, New Zealan)

Butter can be clearified- Gea_ and can last more than a month with out refridgaration, just take a pound or so and put it in a pot and cook it on very low for an hour or 2 this will separate the solids scoop off the scum, throw away on top and pour the clear through a cheeze cloth leaving the solids in the pan, its a lot healther for you and is common in India,
tastes great and last a very long time in South Fl heat, will stay liquid when its hot out and turn solid if cool

I am sure that we bought canned butter from N.Z. while in Georgetown, and St. Maarten. It isn't sold in N.Z.?

Hangs head sheepishly. In my defense the admiral (who is catering manager for a yacht charter company) wasn't able to find any so I didn't even try anywhere except here. Thanks for the info guys and yes, I do know where to get it in NZ now. Gord, you're a legend (yet again)
