Funny, Jim makes something similar using flour tortillas: The filling is cheese (like a quesadilla), some sliced ham, sliced onions, sliced tomatoes, some avocado, and a sprinkling of fresh coriander. Yum.

It's similar to a calzone, but with calzone, the filling is properly inside the dough, but all sealed up, so to speak, because the dough rises before it is baked. I'm thinking is is like a quesadilla, made Italian. But nonetheless, a tasty lunch.

I buy ready made pizza dough, make a bunch of flat pieces the size of a small plate and bake them on a hot cast iron skillet brushed with avocado or walnut oil (more heat resistant than olive oil). Comes out kind of like a naan bread in Indian restaurants. Great with sour cream-cucumber-dill-garlic dipping sauce. At lunch it's a meal in itself. Or roll it up over a piece of grilled salmon with same sauce.

I've whipped up Pan seared Naan actually. You don't need a tandoori oven. All you need is the naan dough and a VERY hot pan. Comes out perfectly. My very picky Desi girlfriend gave it her approval for being the same as real naan. Ha ha

I have two fagor pressure cookers, one fits on top of the other almost like a lid. So what I do is heat the one that's like a skillet and start cooking the flatbread, at the same time I start heating up the other. When the bread is ready I flip, put sauce and the fixings on top and take the other pressure cooker and put it on top of the skillet. After few minutes I turn off the heat of the skillet and let it sit for a while. If I was a little more patient the pepperoni would have been cooked a little more but I was hungry.

Can be done, in a large (16") cast iron skillet. Cook one side. Flip and cook the other while you apply toppings. If there is propane aboard, a torch will crisp the toppings, or you can cover and just let them steam from the crust cooking.
I have done frozen pizzas on my magma kettle grill with the cover on. It is fun and kind of challenging to get one that isn't burnt.
