Im far from a Vegetarian as a person can get.

However, I live in Spain and as such follow the Spanish lifestyle pretty much regarding food.

You know what my favourite Tapa is?

A ripe fresh tomato cut in chunks, wine vinegar and Olive Oil poured over it and sea salt.

Thats it... I have it every day with a glass of beer.

Currently I follow with a small tapa of caricoles but thats another story...

Thanks Jedi, managed to get it in to the Paprika app on the iPad, my better half loves Nasi Goreng so will be interesting to see how she goes with yours, looking at the ingredients I think she'll love it....

Good point about the oil, I never preserve garlic, herbs or chillies in oil without some prior treatment due to the risk of botulism. I didn't even think of that with onions!

I made a half pound jar full (3 medium onions) and they are delish so I don't think they'll last for long. Next time maybe an even smaller amount is the way to go so that they are not hanging around for more than a couple of days

I have taken a little care without being fanatical and in a decade (despite little being refrigerated apart from drinks), we have never been ill on board. Personally, in hot weather without refrigeration I would keep the number of days brief and not reuse the oil/vinegar mix over and over.

I am about to try this onion recipe. It sounds scrumptious and I have an onion fan with me .

Garlic in oil is a problem?

Here is Spain, every cafe has garlic in oil for the customers. Same bottle is used over and over... Doesnt seem to be an issue.

By the way, since then I have been dropping garlic and chillies into alcohol (vodka or gin usually, but even brandy) if I have an excess of fresh ones to use up. Even better chop or mince them first. After a week strain the mixture and discard the solids. You are left with a beautifully infused liquid. The solids are rendered nearly tasteless.

It all depends on how it is prepared, dropping raw garlic in cold oil is not to be recommended and I wouldn't eat it if it was more than a day old.

Ok.
Now I have a MAJOR problem with that paper. Here in Spain, Raw garlic is placed in Olive oil everywhere and used daily. I dont recall EVER reading of massive outbreaks of bacteria induced disease... The same for Greece and Italy...

Yep. Raw. Guess I left them a touch too long .

If you are doing this to eat the cloves, then it needs to be done reasonably "quickly" (personal judgement needed here). If it is to infuse the oil, then the oil needs to be heated first I think. I still don't know what the expected longevity would be then. Worse probably than when this is done with herbs that have a large surface area relative to mass.

I bet the Spanish have a high turnover of those cloves of garlic and the oil for this to work long term or maybe they heat the oil first.

I read similar recommendations after my garlic incident.

Weavis, I had a deadly mix on my hands. It was early in my cruising days and taught me a very valuable lesson.

I myself have 2 litres of olive oil in a wide mouth glass jar on my counter with about 50 cloves of garlic in it and a few Jalapeno peppers.. It lasts me about 2 months. Used for flavouring everything from Pizzas to potatoes to omelettes..

Have done this for 20 some years.
My local Pizza place in the UK used to have a gallon of oil with garlic cloves in it and used it for his Pizzas.. takes about a week for the garlic to infuse the oil...

I dont screw a lid it. It has the lid just covering... I think garlic can ferment..
