Meal Stretchers

Unexpected company? Steaks too skimpy? Catch too sparse? What are your favorite meal stretchers? Mine include: add extra can of beans to chili, top small steak or burger with a fried egg, add a can of tuna or other seafood for a small catch and make chowder.

That's assuming you have a wild variety of foods onboard. Good in town, but less likely on a sail.

So I say just add water.

butcher shop with excellent beef is just 2 blox away--easily walked to in case of folks showing up uninvited when they smell the bbq....rice with veggies in it--mexican rice, worker style-- chopped poblanos, corn, green beans, summer squash, red or yellow bell pepper, onion, garlic--makes very nice addition to the meats, and tortillas are a necessity.
unexpected company is why mexico has carne asada--stretches skimpy cuts--skirt steak, etc, a looong way....

Add white sauce and cream it. Works with eggs, fish, vegetables.

poblano chiles prepared by burning skins off, cilantro, crema or media crema, onion, garlic
mix all but crema in pan and cook together until mushes together and flavors merge nicely. should get to be a greenish color. add crema or media crema and simmer for a bit. add chicken or prawns or something lovely and ta daa--serve with the mexican rice full of veggies and tortillas. pollo en crema verde--one of my favorite dishes....
for a switch, add some serrano-not much--chile to the rice and veggies..

what is fhb??????
i use beer to marinate usa beef, as it has no flavor--angus is borderline flavorful--the beef here where i am cruising is soooo fine and tender and wonderfully flavored--doesnt need marinade...
beer is also good for soaking a chicken before bbqing.....

Nothing beats added flavor to extend meat, and nothing beats Montreal Steak Spice.

Here is one recipe, but I find the original is wonderful.

I have never seen it outside of Canada.

Connie always has a loaf of home made bread in the freezer, and extra rice and veggies, with peppers and onions, use the steak for 2 sliced and stir fry with peppers and onions with a splash of soy sauce and hot sauce!! Or fried potatos with onions and garlic they all will fill an extra mouth or two !!

i make a whole chicken, precooked, last 4 days--first day i eat skin and the papas that come with it, second i make sammishes, third day i make arroz con pollo and 4th is soup.
works even tho i have to share some with bubba--he never liked chicken until i found the round chicken(rotissado) here in la cruz.. must be the spices used here--now he bites my ankles for it..LOL.....

I add an extra dish, or if they're also on a cruise, we pool our resources.
We just had an impromptu brunch for 10 on someone's boat. Everyone brought what they were going to eat for breakfast and we ended up with scrambled eggs, fresh fruit, sausage, muffins -- the list went on and on. We FEASTED.

potlucks are great cruiser get togethers--dock parties, anchor out parties--whatever anyone calls em--they work.
