Mason Jar balsamic vinaigrette

Just ran across this recipe, tried it and is easy and good.

1/2 cup extra Virgin olive oil
1/4 cup balsamic vinegar
1 garlic clove (or more)
Salt to taste
Pepper to taste

Put ingredients in a jar (I used a saved pasta sauce jar) and shake.

I am going to try adding some dried spices next time.

perfect addition to a millonaires salad aka fresh palm heart

method:row ashore on tropical atoll
find 1 juvenile coconut palm tree
cut just above the roots,clean off bark
split stem untill the soft central heart is exposed.
return to boat

slice the heart finely add garlic onion and (optional tinned mixed veg)
add vinigrett,mayonaise toss......eat

great after weeks at sea with no fresh veg

try also instead of useing balsamic use lemon juice,and add a bit of origanum
