Jedi's White Bread with Variations

This one is easy:

(again, 2 lb loaf with Zojirushi bread maker but this loaf turns out a bit small so let's say it's a 1.5 lb loaf)

Empty a can of Presidente beer from Republica Dominica in the pan for a good start (other pilseners allowed :-). Add 1.5 Tbsp olive oil and 4.5 cups of bread flower or all-purpose flower, 3 Tbsp sugar, 2 tsp course salt and 1.5 tsp instant yeast (keep yeast clear from the salt).

Use regular program, I like dark crust.

Variations: add 1 Tbsp dried Italian herb mix or 2 Tbsp sliced black olives... or both. You're supposed to throw the olives in when the machine beeps during kneading but I often throw them in right away to be done with it

Now for a trick: when your machine has a dough program, you can select that instead and you end up with pizza dough, enough for 2 pizzas the size of the tray of a Force10 oven. You can put half of the dough in a gallon ziplock and keep it in the fridge for the next day.

Pizza time !

Take a small can of tomato sauce (no paste) and empty it in a small bowl. Add some ground pepper, a pinch of chilli flakes, 1 Tbsp dried Italian herbs plus extra 1 tsp of dried oregano. Add 1" of anchovy paste from a tube or a couple of fillets from small can. Mix and put aside.

Take oven tray and oil it a bit (I use PAM). Dust with corn flour and put aside. Let oven preheat to 180 deg Celsius.

Dust counter with flour and throw half the dough on it. Cover with flower, turn and fold a bit, adding flour and repeat until not too sticky anymore. Roll it out until it fits the tray. Add more flour if sticky. If stuck to counter, drink a beer, add more flour and try again Get it on the tray and brush with olive oil. Add thin layer of tomato sauce. Put aside.

Open a can of tuna, mussels in water (no vinegar) and add some seafood if avail. You can use sardines too. Rinse and dry, mix and spread over pizza. Chop up a big onion and spread over pizza. Same for garlic to taste (slice it). Open can of anchovy fillets if not done already and put 6-8 on the pizza. Add ground pepper and some oregano. Top with a bag of shredded mozzarella cheese. Bake it for 30 minutes.
