Re: How do you stock your galley when not cruising?

We keep extra (above a few on the shelf) of anything that is well-sealed under the floor boards and similar places. Saves space on the shelves. About once per week we dig in the floor to replenish. But we don't leave a large stock unless cruising for weeks. Just enough non-perishables for 3-4 days.

To cool the fridge quickly we carry about 8 frozen sports drink bottles (just water). Otherwise, sensitive items see too much heat while the system is stating up. For one-day trips and some 2-day trips, we never need to turn the fridge on!

The microwave meals and canned vegetables are for when nothing else is easily available. For when we run out of other options.

As a practical matter, when cruising, our aim is to visit places not just move the boat so we are often eating restaurant meals. Almost always the "doggie bag" is enough for the next day's dinner. If there is a grocery store within walking distance we will buy "real" food for the next few days.

And though we don't plan on it, we generally catch enough fish to return with over half of the meat. We never "save" a cut for a special meal, since something better is generally caught.

Rice... I've never had a problem with weevils.... but then don't buy rice in bulk in strange places. I buy by the kilo and keep it in sealed jars after opening. What I have discovered in NZ is boil in the bag rice... 'Uncle Ben's' and one other brand... both imported from Australia and yet I haven't been able to find in Aust. Enough in each pack to feed 2 to 4 people depending in appetite... no mess, no fuss, no cleanup drama.

So how do you get the dead weevils and eggs out of the rice?

Two or three choices for you:

1. Leaving the dead weevils and their eggs in your rice adds high quality protein (guaranteed free of pesticides too!) to your diet;

2. wash your rice before cooking: dead and live weevils float; so do rice grains that have been hollowed out by weevil larvae.

A. No easy way to remove the eggs. An adult rice weevil drills into a rice grain, inserts an egg, and then cements over the hole. If the egg is unhatched (meaning the larvae hasn't started gnawing away at the rice grain from inside), detecting the egg is close to impossible (meaning that the time necessary to inspect each rice grain would defeat you accomplishing any other goal on your job list that day).

3. If you buy a quality parboiled rice (such as Golden Sella, the premium parboiled basmati of choice; but you can also find parboiled rice of other varieties) you will sometimes find live adult weevils if you are purchasing in an economy with a supply chain that is infested with weevils. Those are vagrant rice weevils - they're searching (unsuccessfully) for rice grains into which their ovipositors can drill.

Led Myne is not equipped with a freezer nor the electric power to hold 5 kg of rice at -17C for 12 hours. I've not had a problem asking retailers, including in less developed economies, if they could do me the favour of storing a sack of rice in their freezer overnight.

In recent times I have been using a wok, mostly, when under way. It is extremely convenient, stable, and easy to wash.
Every can, packet, jar, everything-- goes into a plastic 'freezer' bag before stowing. Veg. are wrapped in kitchen paper to keep them dry, then into green plastic bags.

Use liberal amounts of this:

Just kidding, LOL. When I was a child we lived on an Indian Reservation in upstate New York and at that time there was a fair amount of bulk/communal food and often cleaning was just part of the standard food preparation. Corn, beans and rice especially were rinsed in water which floated a bunch of foreign debris off the top, and then the item was sometimes ladled out with a sieve somewhat carefully and there would most always be junk left in the bottom of the pot with the water. Dump that out, put your item back in, and then start soaking them for cooking or whatever.

We eat largely the same as when we are at home.

Turkey, stuffing, mash potatoes and gravy was great yesterday (to be truthful, we are in the RV right now but we've done the same on the boat).

Although some time since we have done this, we used to always keep some good quality backpacking type dehydrated meals on board. (REI stores stock the best brands). They can last for years without refrigeration, no worries about getting bugs into them, and taste pretty good. If you are tired, cold and hungry they will taste fantastic! In general all they require is some boiling water, and usually fix up right in their pouch so no pots to clean up afterwards.

I would probably still stock some on board, but these are pretty much impossible to find in Mexico.

Of course fresh food is going to be better, but for your stated purpose these types of packaged meals are a great option.
