I have never used a freeze-dryer to process foods, but I do a lot of standard dehydration to do the same. It's
cheap and easy to dry your own
food this way, and it results in foods that can be preserved for years if packaged properly.
I preserve all sorts of veg and fruit, along with a few meats like beef and chicken. I haven't tried pork, but I suppose the same approach would
work. I lightly cook the meet, and drain off as much fat as possible. Then season as desired, shred (in the case of chicken), and dry at a high temperature (higher than veg).
