"Doctor" your Canned Beans

Best way yet to make canned beans into a homemade sensation. Dice 4 big onions and bring to a boil with 1 c. brown sugar, 1/2 c. vinegar, 1 can or package real bacon bits and a pinch of hot dried mustard. Add a chopped green pepper if you like. Cover, reduce heat, simmer 20 minutes. Mix into 4 cans beans (preferably a mix of kidney, pinto, small red, navy, what have you) and bake until bubbly. Serves 8 to 12. Canned beans cost more, weigh more but can save the day when you don't have time or fuel to cook dried beans.

We have been known to do dry beans in a pressure cooker !! saves gas and turns out good (depending on your seasoningLOL) but your canned beans sounds great ! got to try it ! thanks Connie

I like to offer a couple of hot sauce choices on the table rather than spice up the entire dish. Not everyone can handle hot foods. It's such fun to shop in every port for the local hot sauces and they are always a conversation started when one has guests on board.

I put pinto's into my pressure cooker. When done I add dark brown sugar (one cup). Add several drops of my home made hot sauce. Here's my hot sauce:
  • 20 red or orange habanero chiles
  • 1 medium white onion, thinly sliced
  • 1 1/2 teaspoon(s) finely grated orange zest
  • 1/2 cup(s) freshly squeezed orange juice
  • 3/4 teaspoon(s) finely grated lime zest
  • 2 tablespoon(s) freshly squeezed lime juice
  • 1 cup(s) cider vinegar
  • 1/2 cup(s) water
  • 1 teaspoon(s) dried Mexican oregano
  • 2 tablespoon(s) extra-virgin olive oil
  • 2 teaspoon(s) Kosher salt
  • 1 1/2 teaspoon(s) sugar
add a few drops of this to the pinto's. Taste and if not hot enough add more. If you have to ask how hot this sauce is don't try it. But it adds a whole lot of flavor. All this stuff I usually have on board and the sauce lasts a long time. When I make my home made tortilla's the liquid that I add is my hot sauce. Makes a great tasting tortilla.

The bean recipe sounds awesome. Try adding diced granny smith apples (2-3) to your mix and cook together. It really adds some flavor. Thanks for the recipe.

i make my beans usually pinto or black ones, with a serrano chile and some pork--like piggy feets, not pickled--fresh or frozen are best...oregano, onion cilantro....serve as a side dish with meats and rice...add to tacos.....
