Can make homemade cottage cheese that is quite good from powdered milk or UHT and also yogurt.
Cottage Cheese
8 cups
water
2.5 cups full cream milk powder
1 tsp citric acid (can use lemon) the citric acid works better
Bring the
water and milk powder to where it just starts to boil. Add the citric acid, and the whey and curd separate.
Pour through cheese cloth (or clean tea towel) to strain curd. Twist towel and place in strainer with weight on top for 1 hour.
Cut into cubes or crumble add a pinch of
salt to taste. Sooo Good
Im in
Australia so can get full cream milk powder. Have used UHT milk with this as well. Great when you run out of cheese, I use in lasagna, salads, eggs, stir frys, fried rice etc. I also save the Whey and use that in a pot of soup, taste like a veg stock and good for you.
I wonder if Soy milk would
work?
