Never taken a bite of the sponge...just looked like a big ball of cellulouse to me...will try it next time.

I apologise for not writing more clearly earlier, Olly75. Let me try again:

1. Get yourself (buy or fabricate ... it's your choice) something like the CocoTap.

The CocoTap fabricated in and sold from Australia has advantages (strong, folds so it adds little in weight and volume, made of food grade ss, does a cleaner and neater job than a screwdriver or a marlinspike) over the others.

2. Choose only green coconuts - also called young coconut, kelapa muda, etc.

3. Spike the green coconut with your CocoTap and drink the coconut water.

4. That's it.

Why would you eat the meat? It's 33% fat. Of the 33 grams of fat in every 100 grams of coconut meat, 1 gram (or 1%) is monounsaturated. The other 32 grams is saturated fat. So it's 32% saturated fat.

Look at the statistics for cardiovascular disease from any economy that consumes much coconut meat or coconut cream (e.g. from Fiji:
Heart Disease | Ministry of Health and Medical Services
and
https://www.ncbi.nlm.nih.gov/pmc/articles/PMC2536273/).

Or read the report of any study that has investigated the link between eating saturated fat and higher levels of LDL cholesterol.

I'll accept that eating coconut meat, with its 32% saturated fat, might be a smidgen better than eating a few spoons of suet, lard, goose fat, or beef dripping.

But I have to ask: unless you're after suicide by heart disease caused by high blood levels of low density lipoprotein (LDL), why would you?
