Chocolate that survives a warm boat?

Do you have a recommendation for chocolates that survive a warm boat? I'm finding our chocolate stash tends to get a bit soft and clumpy.

Temperature. The melting point of cocoa butter is around 34–38 °C (93–101 °F). The melting point of chocolate is 30–32 °C (86–90 °F).

I'll assume there's no fridge, fridge isn't running or you can't spare fridge space for chocolate.

Maybe find a way to retain the chocolate in it's melted form (without making a mess), then somehow chill down smaller quantities as you eat it?

Now this might sound weird, but if you buy your chocolate in Australia it will melt at a higher temperature (on a same-product-like-for-like basic).


They do a thing to chocolate called tempering during which they can modify the melting point.


Not much help unless you want to sail to Oz, but it does mean that different brands might have different temps. I bet if you did a comparison test you'll find a winner.... and it might be a pleasant exercise!!

Lindt makes a tempered chocolate, as well as others.

Not sure what type of chocolate you like, but white choc. will melt at a lower temp. than milk, which is lower than dark. We like dark 85% and it stays fairly well not refrigerated.

Also check the other ingredients. If it contains lecithin ( = soya lecithin), it will melt at a lower temp. Typically 70% will contain lecithin, while 85-90% will not.

The military solved this one a long time ago. It's called tropical chocolate. Hersheys makes it, probably others also.

They quit making Hersey's Tropical Chocolate back in the 90's, the military don't need them anymore I guess.

While military chocolate and tropical chocolate may have withstood melting,
looking at the ingredients listed here, I'll take plain, no sugar added 85-90% chocolate any day.

I remember buying C-rations when I was a kid, to take camping. The "tropical chocolate" bar was a standard feature. Some people don't like it, and it certainly does not taste just like "normal" chocolate, but I always liked it pretty well. If it was still available, I'd buy it for certain, particular situations.


Anyway, I don't know if anyone makes it anymore, but a search for "tropical chocolate" should turn up something. (At the very least, some interesting historical information.)

If you need to have a stash of a fave chocolate bars, then keep them in the fridge. If you just need an occasional chocolate binge, then consider making a batch of brigadeiros (Brazilian truffles) - you just need to keep condensed milk and cocoa powder on hand.

How about stocking up on cocoa powder,? Then make your own sweets fresh as needed.

Put in a plastic or waterproof bag that doesn't float and attach to toe rail and drop over the side. Beneath the surface it shouldn't melt. Put a weight on it and sink it further. haha. I don't know, get creative.

The famous Hershey's Tropical Chocolate. Came in every SP pack handed out by the Army during the Vietnam War. It tasted a bit like chocolate flavored candle wax and most GI's gave it away to Vietnamese or Montagnard kids. They seemed to like it just fine.

Just did a serch and it seems cadbury is making a high heat chocolate as well. Where to buy??
