Re: Breadmaking -- By Hand? Or Machine?
My preferred approach these days is "no-knead", baked covered in a Dutch oven for 1/2 the time, then uncovered in a steamy oven. Produces nice thick crusty bread. Misting the bread with water once uncovered also adds to the crust.

Re: Breadmaking -- By Hand? Or Machine?
I am trying a first today...making two loaves side by side.
A cheese infused sourdough and a raisin infused sourdough.
I plan to bake them in their respective bread pans with a tin foil covering.
Photo's will follow.

Re: Breadmaking -- By Hand? Or Machine?
You need to do the cuts with a razor blade for a perfect crust. I forgot the name but there’s special razors for it.
A Lame. I am surprised to see one that seems safe for keeping in the drawer: https://www.amazon.com/KneadAce-Upgr.../dp/B0DR97671B
For a boule you need the tic tac toe pattern

Re: Breadmaking -- By Hand? Or Machine?
I am surprised about all this talk about the need for an enamelled dutch oven :-) I uses a 2 qt Lodge cast iron... about $40... and keep it well oiled. Fits the boat oven like a glove.
I cut my home recipe for no knead boule and or sourdough down to 2/3rds (about 2 cups of flour) and it is perfect for two people.
And my hit of the day: keep some kosher salt and herbes de provence handy and sprinkle on top as it goes into the oven. Adds just a bit of that savory bite with no effort.

The cuts are made with a "bread lame"
I have one of these...$8 on Amazon....basically a holder for a razor blade

They don’t work like a lame does. I tried it all

Yep, that the Dutch oven I use. I am too cheap to buy an expensive enameled one. My bread "pans" are also Lodge cast iron too.

Would a medical or art scalpel work?

Re: Breadmaking -- By Hand? Or Machine?
If the looks of the final bread loaf are secondary for any one person, you could use a breadknife....chainsaw...chisel...the list is endless.
For that matter you don't need to score the dough at all, as it will find it's own "weak spot" to burst open. or several "weak spots" as the case may be.

The pattern was designed to optimize the crust every time instead of rolling the dice. I don’t think you used a lame because then you would know the difference.

I must admit I didn’t try those even though I have them at hand. You cut quite deep and everything else really disturbs the dough.
There’s good videos on YouTube.

Re: Breadmaking -- By Hand? Or Machine?
Reuters: overdue sailor found drifting but safe.
I just didn’t have the thyme , I mean, I can’t bake to perfection and maintain and sail!!, there’s only so many hours in the day scalded Captain Nonstick when confronted by the coastguard. he eventually folded,I have no zest, I don’t fit the mould, I never could blend in, he blabbered as he was whisked away to safety.
We don’t understand said several bystanders. The vessel was in perfect condition , it hadn’t rolled and all relevant spares were onboard. It’s not that he was short of dough or didn’t know the score.
The weather had been perfect, at worst just drizzling.
He’s not going to be decorated for this yelled another.
