Baking on board recipies

Hi all

Does any one have a recommendation for a book on baking on board? I have a breadmaker but am looking for alternatives to the normal loaf, so things like tortillas, pita, chipati or any other interesting variation. I only have a stove top (although toying with the idea of a convectuon oven) And If possible in e format as I'm trying to cut down on numbers of books......

Also with a stove top I recommend checking out the Omnia oven. It comes with a little book of recipes but I bet any baking recipe can be adapted for it:
I recommend getting the silicone insert package.

Regarding the Omnia. Works great. We made bread in it so good we even skipped the local "Boulangerie".
If you put a nice coat of butter on the mold and a slight bit of salt on it you get a delicious crust and easy release of the finished loaf...

I normally start with a simple dough:
3 cups flour, 1 and 1/4 cups water, 3 teaspoons active dry yeast, 1 teaspoon salt.

Keep in mind that it's a balancing act between water and flour, not a 'formula' so to speak. The goal is to make a dough that feels 'lively' without being too 'dry' or too 'wet'. Easiest for me to use a fixed amount of flour and add water to suit.

From there it normally goes one of three ways for me:
-plain bread (knead, rise, shape into greased pan, 2nd rise, bake 375-400F 15-20 min or until you get a hollow sounds tapping on it)

-pizza crust (kneed, rise, shape, bake as above for 10 min, add sauce and toppings, bake 10 more minutes)

-cinnamon rolls (kneed, rise, roll out, coat one side w/ butter-cinnamon-sugar, roll into tube, cut into wheels, place in pan, 2nd rise and bake as plain bread, frost with powered sugar+flavor extract+tiny amount of liquid until 'spreadable')

The yeast is important. I get it either bulk or bagged from the 'health food' type stores, fresher and smaller cost per loaf. If you can't remember when you bought it it might be too old. Still good after a year if refrigerated. Date the package w/ permanent marker.

Just did rolls yesterday, orange extract in the frosting, and enjoyed the encore this morning!

There are more elaborate recipes with egg and oil and powered milk and such but I normally stop at the 4 classic ingredients.

I need to try chapati sometime again, it's been many years and the recipe does not seem all that different from standards breads. I got to see an acquaintance from the Indian subcontinent make them once...25 years ago. OK, where does the time go?.


PS Anybody been successful with the stovetop-oven-thingies on a single burner Origo?

You really don't have to cook any different than on land unless on passage. Your big drawback is no oven. Pita, english muffins, naan all great to make in oven, google to see if bread maker will do them. I don't think so since most don't require yeast. A convection oven might do. I think you can make tortillas in cast iron pan on stovetop. Check it out.

A simple and easy Sponge Cake recipe is as follows:

For each egg: 2oz SR Flour, 2oz caster sugar, 2oz marge or butter. Mix all ingredients together in a bowl them pour into baking trays. Bake at 180C for about 20mins or until top is rich golden brown and it is firm to the touch.

If you want to make a chocolate one add 1tablespoon of cocoa powder but remove 1 tablespoon of SR Flour.

I've got a recipe for simple soda bread somewhere so I'll dig it out and post that too.

I believe you can use a cast iron Dutch Oven on your stovetop to bake. I have an oven so I zip by those recipes, but I'm pretty sure I've seen them on Pinterest.

By the way, there is nothing better than a freshly baked anything after a cool day of sailing. Good luck!

I second the recommendation for Carol Sherlock. She and her husband Dave have been liveaboards for years, she has a cook book specifically for boat stove top cooking, baking. Her site also has recommendations for food preservation without refrigeration.
