The cow/beef, sheep/mutton, pig/pork dichotomy is an English language thing. It dates from the Norman conquest. Nothing to do with any paradox or aversion. If it were a real paradox, it would manifest itself in other languages and for other meat animals in English.

The serfs who raised the animals called them by their Anglo-Saxon names: beef/sheep/pig/deer
The nobles who actually ate them regularly used their french names for the animals: cow=boef, sheep = mouton, pig = porc, deer = venesoun

Hence the meat became known by the french animal names boef -> beef, mouton -> mutton. porc -> pork, venesoun -> venison
