I'm looking for an answer for this too.

I brought brand new mattress covers. Then had crew for a few weeks and afterwards the underside of the mattress cover was thick with mould.

There are 3D mesh type products that go under a mattress. They look like they would work, but only if their is space around the mattress. Most boat mattresses are only open about 60cm at one end. The rest is boarded by walls.

We are in Florida where it's almost as wet above the waterline as below; we've been using Hypervent for years with zero mold. You may be able to find something else, but Hypervent absolutely works perfectly. The sides of our mattresses press against the hull, so I don't believe that makes a difference.

This is interesting. We live aboard in the Caribbean. The boat started in Lake Michigan where we sailed for several years. It hasn’t been out of the Caribbean for three years now. We have no mold issues under mattresses. The master has a custom folding mega mat with what looks to be an impervious outside. The others are 4” thick open cell foam with biocides built in.
