Anchoring in South Florida

Hello All:
I would like to get information about anchoring out in various places from Ft Pierce south to the Keys. Any particular places to focus on or avoid?

My personal experience is limited since I haven't been there since the 70s when I lived in PB County. I know that the state is trying to regulate anchored vessels.

I have a project in the planning stages that involves running a sail-training vessel in South Florida during 2018-19 season. We plan to offer several ports of embarkation/debarkation so we prefer not to be tied to a specific marina all winter.

Your thoughts are appreciated.
