I have been very happy with my 12'6" Uli
inflatable paddleboard combined with both a paddleboard paddle and a
kayak paddle for heavier wind/wave conditions which lets you treat it similar to a sit-on-top
kayak. Two people sitting down with a small bag of
gear is doable in light to moderate conditions even though pushing its abilities a bit. Uli boards are MUCH more rigid than a "standard"
inflatable paddleboard because they use "drop stitch technology" which makes a dramatic difference. In colder waters without planning to use a standard inflatable dingy when desired I might lean towards an inflatable kayak or two but the paddleboard option is usually very practical and also a lot of fun (plus much less room to store inflated when desired and easier to carry up a beach alone).
