90 Day Visa Rule in Europe

I'm looking to sail from France down to Croatia or Turkey and back over 6 months and don't want to exceed my 90 day in 180 rule in the EU. I know time spent in Croatia and turkey is excluded. Is time at sea also excluded and how do I prove this? Should I get exit stamps when I leave port and in practical terms how hard are they to get?

Generally once you can show that you left somewhere and went by sea to another country the sea time is ignored. It's usefull to get exit stamps. They will be applied by immigration just like entry stamps. Sometimes if you go along the coast from schengen country to schengen country the sea time can be disputed. But rarely.
