The current stuff looked like 3/8" for the halyards and either 1/2" or 5/8" for the main and sheets.

3/8" should be strong enough for everything, but for the sheets consider upsizing to make them easier to handle. Just make sure they fit through the required blocks, etc.
If you upsize you can go with less expensive line since it has greater strength. For sheets I'm a big fan of 8 strand brait as it's easy on the hands, does not kink, and collapses into a smaller "pile" than three strand or double braid. But it's "stretchy" so if you're
racing it would not be appropriate.
