What material for cabinetry?

I’m looking at a Cat and want to change cabinetry / some partitions (not bulkheads).

Veneers scare me for the amount of skill required to get a good finish. I’m thinking white laquers are easier.

So the question becomes

What material
How to join it - screws, brackets, glue, glass, magic

Ply
Timber
Glass over foam
Some honeycomb thing
Other

I am re-doing the interior of a 'rustic' kit boat. I opted for timber and ply, screws and construction adhesive more or less as the original but with additional framing and access features. I am trying pocket screws (Kreg jig) for some of the framing. All is to be painted, no varnishes or clear coats. With good paint, brushes, and technique it is possible to get a nice finish on cabinets without spraying.

We used birch plywood (3/8" IIRC) to build v-berths on our boat. Used pine for interior structure & screwing where needed. Trimmed outside edges with ipé. Epoxied everything (especially the ply sides and edges) before install and before varnishing everything with two coats.
