steel hull insulation

Hello all,
going through a major refit of my steel ketch any suggestions on insulation materials and its application? I have about 5cm space to work with and I will go to the north sea and baltic. Should I insulate below the waterline? Its a full keel traditional hull with plenty hull below the waterline before you get to the bilges.
Thanks for any advice, the last thread on the subject I found dated back to 2006.
