On my set up the cables are fine but the so-called stainless steel spiral in the sheath is showing signs of rust, although no worse than what I get on my bike.
Shimano also make a high end brake/derallieur cable sheath that is Teflon lined and supposedly a higher grade of stainless.

I suppose you'd get a funny look if you asked for 316 Stainless when ordering your bike brake cables.

Don't know about the Campag stuff, we live 150 meters from the beach, and it has been driving my solar tracking for years without problems, but 150 meters is a lot further than it would be on a boat.
