Interior wood/veneer restoration

Im sure somebody already asked this question but through searching I could not find the answer. We have an Ericson 31' Independence we will be living aboard. We have been trying sanding and chemical stripper to get the worn old poly off. I just had the thought that i might not need to strip it all off just down enough for the next coat to stick.

Now we have spots that are light and down to the wood and some that are not. Can I just finish sanding the areas that have a little gloss left and just re coat with a dark stain poly? Or will it all look incredibly uneven now?

This boat has a good amount of Interior wood. I understand its a lot of work but Im no pro.

Good luck with it, generally, it will not all be the same color if some is back to bare wood, and some is not. However, be very careful, because the veneer is very thin, and there's no easy fix if you go through it, sanding.
