our cat was converted by the previous owner in exactly the manner you are considering.

boat was built with 2 x 250L fuel tanks + 2 x 250L water tanks. one of these water tanks was switched to fuel so 750L fuel + 250L water (& 80LPH watermaker)

the extra fuel tank was then fitted with a transfer pump, to move fuel to either of the engine tanks

system worked brilliantly - and 750L of fuel gave us a range of over 1000' (although we rarely carried so much)

due to the watermaker we never missed the extra water capacity, although on passages tended to keep the water tank fill up - just in case.

i would have no hesitation to do the same

Thanks for that.

Burn rate etc. is purely academic and handy to know etc. when cruising in order to budget usage. However on our last trip I worked out I need more fuel. Also our previous yacht carried 700L, and this worked well, so I guess that is where I would like to get to, or as close as.
