Regarding the davits, I have had the same questions. First to stop the side to side movement of the dinghy the only solution I know is to firmly tie the dinghy to the stern of the boat
, side to side to hold it in place. If you have davits that rotate then also fix the davits firmly in place. I added two cross bars between my two davits to keep them stable and add some strength.
I have a very short harness to hold my dinghy so can raise it very high. It is about 0.5 M below the pulley on the davit which I think is high enough for day sails
and coastal cruising. Like you, I will bring the dinghy on deck
for off shore.
