It seems like I’m always having to pull down ceiling panels for one reason or another and I’m sick of the screws. I was looking at the beaucips that were mentioned in other threads but I’m not seeing how I would attack the bottom piece. The wood on my ceiling panels is only like 1/4” thick so what is the accepted method? Can I just glue it with 5200? I could pull the liner off and but a small bolt though but I feel like you’d see that through the liner even if I sized it perfectly. Any suggestions?

Without pictures of your cabin ceiling it is hard to visualise. There's stacks of online articles pertaining to cabin ceilings. Have you had a look at them?

Have you considered panels held in place with adhesive backed Velcro?
