If you're worried about water, once you confirm there isn't a bunch in there, either add a bunch of Iso-HEET or fill the tanks with E10. Either should absorb any little bits of water and let it get burned out of the system. Just make sure there isn't enough water to cause separation issues.

Otherwise, the Racor will catch any water (and may need to be emptied a couple times), but there may still be a little bit of water in the bottom of the tanks that hasn't sloshed up to the dip tube.

I have had to deal with the same issue in the past. I simply ran a fuel hose from the fuel pump to 5 gallon jerry jugs, turned on the ignition and let the fuel pump fill the jugs. Then I put the old gas in my car and put new gas in the boat. Any water in the gas stayed at the bottom of the jerry jugs.

Come to the dark side. We have donuts.
