I've sailed on 2 different Kurt Hughes designs and 3 different builds. 2 by the owners and one done professionally. They all sailed very well and the building was straight forward. All 3 have been in charter use since splashing. One of them for decades and they all still look good and perform good.

You are in Colorado? You would need a de-mountable design to transport it to the ocean. That should narrow down the choices.

Berndt Kohler has some very interesting designs,though many are smaller than you state you are interested in.
They are easily built and light, plywood/epoxy, bluewater capable.

Ocean Jedi was originally built in 2010by Cata Ballotta--still running strong. just crossed atlantic from aruba to portugal before Covid shut it down in Lagos, Portugal. I mostly upgraded in the cockpit for electronics. new flooring after 10 years (cosmetic reasons.)

Bernd Kohler's Pelican is an excellent and very roomy design that is a pretty easy build. It's worth looking at. It's a fairly simple build compared to most. A very well laid out interior about 38' LOA and almost the same LWL, 22.5' beam, and about 4400 lbs payload, and a draft of only 2'. A nice large saloon, two generous aft double berths (where berths should be), and one forward berth. Galley down, but sufficient space that it could easily be up. One nice thing about Pelican is the cabin sole in the hulls being fairly high means only a couple of steps up into the saloon, unlike the Wharrams with their deep V hulls and a long climb up and down into and out of a deep narrow hull.
