Its a pretty big range. Are you replacing the wire only or turnbuckles and toggles? On a T37 you should look at the chainplates and consider replacing them.
The running rigging depends a lot on how hightech you want to be. It is pretty straight forward to estimate the line lengths and just price out the equivalent sta-set line as a replacement using the same diameter as what is on there.
About 2 years ago I did a complete replacement of standing and running rig in Nanaimo. Included inspection of chainplates, new rod rig and new running rig (all of it), new furler and new mast lights (LED). Mainstay rigging in Sidney did a great job and I did not mind paying the $15k.
42' cutter rig. Total new standing rigging: wire, turnbuckles, toggles, chainplates, Hyde roller furling. Parts cost US$6,000.00, half of that for the roller furler. I'm doing my own installation but the rigger would do it for maybe another thousand tops.
