Schematic for Catalina 25

I'm doing a complete refit on a 1987 Catalina 25 Swing Keel. I'm looking for schematics / diagrams / parts list for Plumbing and Electrical.

I don’t have a schematic, but just a honest question (trying not to be a troll and really interested in the answer).

On a boat of that age, why not strip it all out and start new with a new design? Seems this wouldn’t take a long time, wouldn’t cost a lot, would remove any possible future failures from old parts that “looked good” and provide peace of mind that you everything about the plumbing and electrical.

Again, interested in yours (and other’s) answers.
