I have two sailing boats (one 9m and one 11m) and both list to port. Doesn't seem to affect them at all, but it is a bit odd in a marina to see every other boat upright but mine. I have got used to it - just as my own physical flaws have to be accepted.

Good idea but much easier than emptying the entire boat is just to move all heavy movable objects toward the center of the boat and as low as possible. Then do as above. Also just how much list are you talking about. 1degree? 10 degrees! ? A degree or so I wouldnt worry too much about. Washer dryer, batteries. Tankage, galley. Generator. These are all objects that could have significant effect on this. Ac units?

I carry a bunch of dive weights, besides for diving I use them for many other purposes.
I easily have 100 pounds, made them myself from lead ahot.
I moved them stbd to port.

Poor planning of all the installs?
We’ve experienced this and the sailing characteristics are changed. For cruising I would want to be able to sail as best as I could on either a starboard or port tack. I’d find your boat frustrating and potentially challenging in heavy weather.

Designer, builder, and sailor, here. Trim is very important for both performance and safety. Further, it’s unseamanlike to sail a boat that is out of trim. If you can’t install all the “stuff” (washing machines, air conditioners, etc.) you think you want, without keeping your boat in trim, then You Don’t Need It. Adding ballast to counter such trim issues is not generally a wise course, and may cause worse problems down the road.

Very funny. Hah hah. It is usually men who get huge pot bellies! On a serious note, in response to the original question, if you are going long-distance cruising you should have a vessel that is balanced as you want to be able to sail well on both port and starboard tacks.
Also, the amount of "stuff" you are taking boggles my mind. One of the beauties of offshore sailing is its simplicity. We are forced to dump a lot of "stuff" that in land living we thought, or we were convinced, was essential. But it ain't!
Maybe this is Nature giving you a nudge to "Simplify! Simplify! Simplify" as Henry David Thoreau said!
Anyway, you are off soon! Good for you. Have a wonderful life.

We (mainly the wife) wanted a "home from home" with all the conveniences as we will be living on her for over 8 months a year. It is so important to have her onboard (excuse the pun) with our new way of life.
I calculated that our cruising is 90% at anchor 10% passage making. The sailing will be island hoping around the Med certainly for the immediate term. The boat is new so hopefully not to much needing repairing/replacing short term and will always be near someone with a oily rag to fix things if they do break.
Saying all that I do totally get keeping things simple.
I will do a big redistribution when next on board and see if this fixes the issue or at least helps.
Really looking forward to our adventure which start in May with a sail from Spain to Turkey be it slightly leaning to the starboard. Thank goodness for ample cup holders .

There is absolutely nothing wrong with adding reasonable trim ballast to a boat. I'd would venture to say about 70% of the boats I've surveyed in the last 20+ years have trim ballast added somewhere, usually by the builder.

I found 70kg of ballast just ahead of the chart table on my Jeanneau SO 342. I removed it and replaced it with 2 130Ah AGM batteries. I like having batteries that can be isolatable way above the water line. You can mix lithium with AGM so after redistributing the weight if it still lists I'd consider adding an AGM, ideally somewhere way above the water line.

Yep, I'd install a dive compressor or more water tanks, something you can use instead of just dead weight
