Present boat has roller furling. Previous boats had hanked on jibs. Jib sheets are always made from a single long line with a cow hitch in the middle attached to the clew. Each headsail has its own sheets and blocks which attach with snap shackles to the slotted toe rail or slide on to the sheet track (depending on the boat).

Hanked jibs- 2 lines, with long tailed bowlines.
Nice and simple. Cheap, plus it's easy to change headsails as required.

Two furlers (jib and Solent), each with two sheets, eye splices and two soft shackles. Don't like using a single s/s for both sheets in case of one failing.

Curious as to why dyneema for a sheet? I get the low stretch is desirable for halyards and some other applications, but why pay more for a sheet line?

With a high modulus sail material that doesn’t stretch with a gust you also want a sheet that doesn’t stretch so that the force immediately transfers to the boat. That is DH’s preference.
For our cat, we already have plenty of sail power and our boat doesn’t really heel to absorb a gust, so a slightly stretchy sheet is not so bad, especially with our bagged out HydraNet sails. Though, on consideration, that would power up the sail and we don’t want that during a gust. So when we get our new high modulus sails it may be time to consider upgrading the sheets. Currently we use 14mm double braid pre-stretched polyester, which is nice to the hand but we can hear it moving through the mainsheet blocks, not so much the jib blocks.

Interesting. To me that's counter-intuitive. I would think that with a high modulus sail that's unable to stretch you would WANT a stretchier jib sheet to prevent shock loads during a gust. Possibly desirable for a racing boat, but I would think a bit of stretch is more forgiving and easier on the equipment for a cruising sailboat.

BTW if you have any suggestions for fender caribiners let me know. Trying to make my single handed work easier taking fenders on and off.

No, not on head sails. For example, sailing to windward in a blow you have the jib sheeted TIGHT and flat so that drag is minimized and it can feather a little in the gusts. If you want to ease the angle, you barber haul it out, but you never ease the sheet. If the sheet can stretch, the sail becomes more full and forces increase during gusts, which is exactly what you do not want.
Same with halyards. You don't want the halyard slacking when it blows hard.
On the main sheet or traveller these negative effects do not happen and a little stretch (not too much) during jibes is a good thing for the cruiser.

I apologize - a little too flip.
I was referring to Fred Roswald of Wings. He mentioned a knot for tying fenders in post 11. It sounds like a handy knot, and my experience with Fred is that he is generous with his knowledge. So, it was a little dig and a request for more information.
