Gosh, this is music to my ears. How about redesigning the interior some. Most have too many staterooms. I believe the salon could be opened up. Move the galley aft. Make a seating area, reading area with two chair seats. More like the hunter. Put up a roomy master stateroom fwd. Of course I've no idea what that would entail. Just thinking outloud.

Hmm, surely the whole point of say an ex charter Beneteau 50 is that for the price its a cheap yacht that is fit for purpose of ocean sailing. If you then want to start modifying it beyond just replacing stuff the costs are going to shoot up. Also don't forget it probably has an interior GRP moulding which will make changing the interior tricky.

I think you will find a lot of work has been done designing the interior. It is a very workable layout as is. 4 comfortable double bed cabins each with full head/shower/basin/mirror. The saloon and galley is as good as you can get. The only common modification is taking out the FWD partition to make the two FWD cabins into a stateroom/sitting room. I think I would prefer the original 4 cabin set up as a big bed while you are sailing just doesn't work,except if you like rolling out of bed.
I would spend your dollars on some solar/wind gen/maybe a small water maker/LED lighting.
There is a handy crew cabin up front which invariably gets used as storage.
