Adding more water capacity usually isn't too difficult. You can have several smaller interconnected tanks to make up for one large one.

Stainless steel is the superior material, followed by plastic. Aluminum is supposedly not that good, but it is very common. Water bladders may be easier to fit.

How I wish I had s watermaker...
