Texas to Thailand

As we get our boat ready for adventure sailing, we're looking at all the great places to go. After running around the Caribbean and Gulf for a little while, we'd like to sail to Australia, Thailand and the surrounding areas.....how the hell do you figure out how to get there, when to go and when NOT to go??
I'm the guy that'll grab a compass and just go. I'll have the Admiral with me and she's not so keen on sailing by the seat of your britches.
Our CD36 will surely get us there, we'd prefer to do it without 20' seas and 70kt winds.

Thanks Grumpy, just bought it. Doesn't have anything on the Gulf of Mexico, but i can get to Florida or Cuba pretty easy and start from there.
