Thermocouple monitor diesel engine

Have a temperature gauge.

Want to monitor engine temperature to make sure coolant system works.

Fresh water cooled.

I have a thermocouple so was thinking of putting one end on the engine
Thermostat housing. The thermocouple in the cockpit.

Hope to catch engine over heating.

Anyone used a thermocouple ?

Usually you put a snap disc thermostat on the mixing elbow to sound an alarm if your coolant/raw water flow stops going out the exhaust.
